How To Make Chinese Dumplings
How To Make The Dumpling Dough:
Start by pouring 5 cups of flour into a bowl and add 2 pinches of salt and mix well.. Then add water when necessary and keep on stirring..
If the dough is to dry keep on adding water, if it’s too thin add flour until the texture is just right that you can knead the dough into a ball. Knead Vigorously so the dough does not fall apart.
Once you formed a ball with the dough, put it in another bowl and cover it with plastic wrap. Let settle for 1 hour so the dough can rise. Now You can start on your filling.
How To Make The Dumpling Filling:
Add some ginger slices and some peppercorn in a separate bowl, then pour about 1 cup of boiling water into the bowl. This will create peppercorn water.
Then add three tablespoons of only the hot water from the bowl with the peppercorn and ginger to your ground beef and stir mix… Mix well until the beef has absorbed the peppercorn water.
Then add 1 egg to the ground beef, 3 tablespoons of shallots, 1 tbsp of cooking wine, 1 tbsp of light soy sauce, 1 tbsp of oyster sauce and a pinch of salt, thirteen spice and chicken essence.
Stir and mix the ground beef well then add a teaspoon of sesame oil and a 1/4 cup of chopped onions. Mix the ground beef again until it absorbs all ingredients then let sit for 1/2 hour.
Note: If you want to make Lamb Dumplings, Pork Dumplings, Or Chicken.. Repeat the filling instructions above.
How To Make The Dumpling Wrapper Shape
Take the ball of dough that was sitting for 1 hour and cut it in half.. Roll half the dough into one long strip about an inch thick and cut into small pieces. Dust with flour to keep them from sticking. You can use the other half dough to make more dumplings later.
Then squash every piece of dough that you cut with your hands and roll them with a rolling pin to make the dough round and thin.
Now take the dough that you made with the rolling pin and put 1 tablespoon of filling in the middle of the dough and fold it trapping the filling inside the dough..
Then start folding the edges of wrapper to make various dumpling shapes (see video above). Once wrapped your dumplings are done. You can Bake them, fry them, steam them or even boil to make soup. Enjoy!
